I don't knoa about "the best" but Roscoe Village Bikes built me a pair of wheels that never went out of true.

Tons! I suggest giving the work to your favorite local bike shop rather than seeking out "the best in town". An ongoing relationship with your local shop(s) is beneficial for everyone.

I had my rear wheel built by Owen at Blue City in Bridgeport. After more than two and half years of carrying a 200+ pound person on Chicago's not so great streets, the wheel build has held up perfectly.

(I usually build my own wheels these days, but Blue City had a winter free labor when you buy the parts deal which I could not pass up as I was gonna buy the parts anyway.)

Owen also wields a brazing torch with a delicate mastery which is almost supernatural....

Any shop can do a fine job building a wheel but I would steer to you Johnny Sprockets, Comrade or Blue City depending on your location.

Thanks all! I'm way over 200 so am looking maybe to get this rear wheel Velocity A23 36h rim rebuilt - just had to true it up for the first time - not sure why it's double cross on one side and straight on the other - but was thinking triple cross all the way around.
